All purpose flour / maida - 2 cups
Warm water - 3/4 cup
Active dry yeast - 1 1/2 tsp
Sugar - 1 tbsp
Salt to taste
Extra virgin Olive oil - 3 tbsp
Chopped bell peppers - 1 cup
Chopped onion - 1/2 cup
Some more extra virgin olive oil for drizzle
In a mixing bowl, add water, yeast and sugar. Allow it to sit for a few minutes to activate the yeast.
1. Add flour, salt and oil. Knead the dough until it is smooth and elastic, about 10 minutes.
2. Form the dough into a round ball and place in an oiled bowl, turn to coat the entire ball with oil. Cover it and let it rise in a warm place for an hour or until double in size.
3. Coat the cookie pan sheet with good amount of olive oil. Turn the dough out onto the oiled baking pan.
4. Stretch the dough out to an rectangular shape, about 1/2 inch thick.
5. Make a bunch of dimples in the dough, drizzle some olive oil. Scatter the bell peppers, onion and rosemary. Sprinkle some parmesan cheese. Cover the pan and allow the dough to rest for 45 minutes.

Caramelized Onion & Cheese Focaccia
3 cups Bread flour
3 tbsp Olive Oil
1 cup water
1 tsp salt
2 tsp sugar
1 slices Caramelized Onion
Some Cheddar cheese
After you finished with the dough, cover it and let it sit for about 1 hour at room temperature to rise until doubled in size.
Take the dough out on table and pat the air out form dough and place dough in a baking tray and leave to rise again for 30 minutes. Sprinkle the rest of the Caramelized Onion on top.
Bake in 180c for 45 - 50 mins.

20gms Active Dry Yeast
1 cup Warm water
1 Tbsp Honey
2.5 Cups Bread Flour
To taste Salt
1/2 Cup Olive Oil
12 slices Tomato (Thinly Sliced)
20gms EGK Crispy Fried Onions
20gms Processed Cheese (Grated)
In a bowl add yeast, warm water and honey. Mix till the yeast granules are dissolved. Then let the mixture rest in a warm place till bubbles form
In another bowl add bread flour and incorporate the yeast mixture and 1/2 a cup of olive oil. Mix thoroughly with salt if required
Once incorporated into a doughy mixture, remove onto a floured surface and knead till elastic
Oil the base of a bowl, and coat the surface of the dough with the olive oil before covering the bowl with a damp cloth or cling film. Let rise for an hour or till it doubles in size
Grease a baking pan with olive oil, and flatten out the dough onto it, oil the surface. Then let rise for another 20 mins
Add toppings such as tomatoes, EGK Crispy Fried Onions are a must for that wholesome flavour and crunch....

Focaccia/Easy no knead Focaccia/How to make Focaccia bread
Absolutely easy and no knead focaccia bread flavoured with garlic and olive oil. A must try bread if you are looking for fuss-free, easy, no knead bread. You can also add Rosemary leaves,olives, sundried tomato and other toppings to it. A simple soft,chewy focaccia with caramelized garlic, drizzled with lots of olive oil. Simple flavours yet very satisfying.
Warm water :250 ml (1 cup)
Sugar :1 Tbsp
Active dry yeast :1/2 tsp
All purpose flour : 2.5 cups(350 gms)
Olive oil :2 Tbsp
Olive Oil 1 Tbsps (extra oil for greasing the pans)
Olive oil 1 -2 Tbsp for drizzling on the top
Garlic 2-3 cloves finely chopped or minced

1.Prepare the dough by combining the active yeast mixture,flour, salt and olive oil.
2.First Proofing for 5-6 hours.

4.Second proofing 1 hour.

Preheat the oven to 360 degrees F/180 degrees C.
Crumble the fresh yeast and add it to a bowl, add the sugar and 2-4 tablespoons of warm water over it, then combine them using a fork. Set aside.
Reserve 1 tablespoon of flour for later use. Put the remaining flour in a kitchen aid, then add the baking powder, and the yeast mixture.
Turn on your kitchen aid and mix everything on low speed. If needed, add 2-3 tablespoons of warm water to soften the dough.
Add 2 tablespoons of vegetable oil and continue to mix until you get e firm dough.
Flour your workspace and press and flatten your dough using your fingers. Give the dough an oval shape. Sprinkle diced onion and dried rosemary all over it.
Fold the dough once, then fold it again. Press it with your fingers, then lay it in an oval baking dish.
Drizzle the remaining vegetable oil on the dough and sprinkle some more dried herbs.
Bake for 40 minutes.

1½ cups warm water
1 pack active dry yeast
1 tablespoon olive oil
4 cups (500 grams) all-purpose flour
1 tablespoon salt
½ teaspoon dried thyme
½ teaspoon black pepper
½ teaspoon fresh rosemary
Mixed tomatoes (about 8 ounces)
2 cloves garlic, minced
Mixed olives (about 8 ounces)
Stir yeast packet into water and allow yeast to bloom. (A light foam should appear on top of the water after about 5 minutes. This means the yeast is alive and active.) Add olive oil to water and mix.
In a large bowl, mix flour, salt, and herbs together. Once incorporated, create a small well in the middle and pour in the water/yeast/oil mixture.
Mix by hand, wetting your working hand before mixing so the dough doesn’t stick to your fingers. The perfect recipe for scratch-made focaccia and three delectable ways to flavor it.
1/2 Tsp Sugar
2 Cups Lukewarm Water
2 1/2 tsp Dried Yeast
50 ml olive oil, plus extra for drizzling
5 cups All Purpose Flour
3 tsp salt
Sea salt flakes
2 tbsp Jarred Pesto
6 Cherry Tomatos, halved
Red Onion, thinly sliced
Combine the sugar and one cup of the water. Sprinkle over the yeast and set aside for 5 minutes to let the yeast bloom and become foamy. Add remaining water, olive oil and flour. Mix with a wooden spoon until it is too difficult to stir and then use your hands to continue to mix.
Turn on onto a floured surface and knead for 7-8 minutes until smooth and elastic. Place in an oiled bowl and cover with plastic wrap. Let rise in a warm draft free place for 1 hour.
Preheat oven to 425˚F. Grease a baking dish with oil. Knock back the dough and separate into thirds. Place the plain third into the dish. For the second, knead in pesto and place into the dish. For the third, place in dish and drizzle a good amount of balsamic glaze.
Use your fingers to make deep dimples all over the surface of the focaccia....

Food memories are preserved hand by hand. This is an original recipe from my grandmother, hailing from the italian area called Basilicata, handed down to my mom and then to me.
The dough is very easy to make, doesn’t need to knead.
This typical italian focaccia has to reach a medium height, seasoned with extravergin olive oil which makes it incredibly soft and enhanced by fresh spring onions.

How to make focaccia bread that’s perfectly crisp on the outside and soft and chewy on the inside. Our focaccia recipe is very simple to make – no fancy equipment is needed at all. The secret to the best focaccia is a great tasting olive oil. Since there is quite a bit used, the bread really takes on the flavor. You don’t need to spend lots of money, just use an olive oil you love. For the herbs, we love a combination of thyme and rosemary, but you could use whatever herbs you love – fresh or dried. Or, omit the garlic and herbs all together and use plain olive oil instead.
