This video will walk you through prepping smoked BBQ Beef Short Ribs on the Weber Kettle. In the video I cover
- Trimming of the fat and silver skin
- Removal of the membrane and Trimming between the bone
- Applying the Rub
- Worchestershire sauce
- Garlic Granules
- 3 tblsp Cracked Pepper
- 2 tblsp Kosher Salt
- Smokey Paprika
- Setting up the Sear n Slow on the Weber One Touch Kettle
- Cherry wood for Smoke flavour
- Times and Temperatures
- 275f for 9.5hours until fall through tender - 207f internal
- Hitting the right doneness

These ribs took a little longer than expected and could probably have done with another 20minutes but it was already 8-30pm. One end was absolutely fall apart and the other end was still a little tight but borderline. The main advice is to make sure you have plenty of time, so get your beefies on on early.

Today I’ve got some 2 inch Dinosaur Beef Ribs that we’re going to smoke on the Pit Barrel Cooker and finish with a Molasses glaze. That’s right, thick beef ribs and molasses!

Beef Ribs Ingredients
• 4 pounds thick beef ribs
• 8 teaspoons brown sugar
• 2 tablespoons Virginia Coastal Steak rub, see here http://www.armadillopepper.com/products/virginia-coastal-premium-steak-rub (or you can substitute 2 tablespoons Kosher salt)
• 1 tablespoon black pepper
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika
• ½ teaspoon olive oil

Glaze Ingredients
• 1 cup molasses
• 1 cup apple cider vinegar
• 1 tablespoon black pepper

Recipe Instructions
1. Mix all of the dry seasonings together.

2. Remove the rib membrane from the back of the beef ribs.

3. Apply the olive oil to the ribs as a binder.

4. Apply the dry seasoning mix on the ribs.

5. Preheat the Pit Barrel Cooker and add some hickory wood chunks.

6. Hang the beef ribs in the Pit Barrel Cooker.

7. To make the molasses glaze, add the apple cider vinegar, molasses and black pepper to a sauce pan over medium high heat and bring to a simmer until reduced by...

Pit Master Heath Riles stopped by for this video to show me his secrets to winning rib competitions. Heath has won the Rib Team of the year in the Memphis BBQ Network for the past 4 years; (He’s well on his way to locking up a fifth title) so he knows a little something about cooking ribs. I’m thankful he’s willing to share his technique with us.

Heath cooks Heritage Farms Cheshire Pork in bbq competitions. This meat is known for its’ superior marbling and flavor. The ribs are given a quick trim to remove and excess fat or sinew and he pulls the membrane off the back. For KCBS contest Heath cooks 4-6 slabs of St. Louis cut ribs and for MBN contests he cooks 12 slabs of the loin back ribs which are a Memphis staple.

The ribs get a light coat of yellow mustard; then a generous layer of his Jalapeño Garlic seasoning; followed by medium layers of his signature Pecan and Honey Rubs. The same process is repeated on both sides, and he seasons the ribs about 20 minutes prior to going on the pit.

I picked up a 5 pound boneless Chuck Roast and decided to make a day of it smoking the beautiful piece of beef on the Weber Kettle using some hickory wood for flavor. This a favorite cut of beef to use, as it really behaves like 'Brisket's Little Cousin' and tastes amazing when paired with a good rub and a slow cook.

**NOTE: At one point in the video I mention that I'm adding 1/4 cup of Apple Cider Vinegar to the foiled chuck roast. Just forget the 'vinegar' part. It was plain old Apple Cider :)

Smoked Beef Ribs Recipe | How To Smoke Beef Ribs

Beef ribs come in a couple of ways...the short beef rib and back beef ribs. The short beef ribs usually come in smaller individual pieces and have a good bit of meat on top of the bone. You see these beef ribs served in restaurants usually braised for hours where the meat has time to really break down. The back beef ribs are more suited for bbq, so that's what I'm cooking today. Back beef Ribs are cut off the ribeye area so most of the meat on top of the bones has been removed but what's left between the bones is really good meat, if you cook it low and slow.

Beef ribs come in slabs about 9-10 bones. There's not much trimming to do to these beef ribs but if you see any cartilage or thick sinew go ahead and trim it off. On the back side you'll notice a membrane. Back beef ribs have a double membrane. The first one is usually removed before packaging and that leaves a thin membrane holding the beef rib slab together. Leave this membrane on to keep the slab from falling apart during the cooking...

Here's a recipe for some big bold beef chuck rubs with a big bold homemade rub to bring it to life!

2 to 4 Beef Chuck Short ribs, separated or on a full rack

Rub:

3 tablespoons sea salt or kosher salt
3 tablespoons fresh ground black pepper
1 tablespoon onion powder
1 tablespoon fresh ground coffee
1 teaspoon granulated garlic or garlic powder
1/2 teaspoon cayenne pepper
Worcestershire sauce to coat ribs

Preheat your Kamado Joe to 250°F and setup for indirect cooking. Add a couple smoke wood chunks of your choice and cook these until they are probe tender (approximately 200°F internal meat temperature.)

I purchased some beef short ribs from Staple Street Meat Market in Corpus Christi, TX recently and decided to fire up my WSM and give them a little Pecan wood smoke. I cooked the ribs low & slow like I would a brisket and they turned out marvelous!!!

These smoked beef ribs are sometimes called “Dino Beef Rib”. To start, trim off any excess fat or sinew from the meat side of the beef rib; rinse under cool water; and pat dry with paper towel or a clean cloth. Don’t worry with trying to remove the membrane from the bone side; you want it to stay in place to hold the meat on the smoked beef ribs bones as they cook.

Keep the seasonings simple; beef is the main focal point. I use a little of my Killer Hogs AP Rub (which you can substitute with equal parts Salt & Black Pepper) and a light coating of my Killer Hogs Hot Rub for a touch of color and heat.

You can cook on any smoker or grill. You’ll need an indirect fire running between 275-300⁰ and a few chunks of smoking wood. I like hickory and pecan on beef, but if you happen to have post oak, then use that.

When the grill is up to temp, add the wood and place the ribs on the cooking grate. The ribs need to smoke for 3 hours.

After 3 hours, the ribs have the right color, so it’s time to wrap for tenderness. Tear off a sheet of Heavy Duty Aluminum foil and place the ribs bone down on the foil. Bring the...
